The Cave Carrot is found via foraging in The Mines. It can also be found in Garbage Cans. Large quantities can be easily obtained by digging underground patches of dirt in The Mines (on levels 10-20) with the Hoe. It may also randomly be found in the Traveling Cart stock for 100–1,000g. Vincent sells a Cave Carrot in his shop at the Desert Festival for 2 Calico Eggs. One Cave Carrot can sometimes be purchased for 500g from Pierre's booth at the Feast of the Winter Star.

Item spawning in Stardew Valley isn't accomplished through typical commands. Instead, it involves a cheat method where you name your character, or an animal, with the item code of the desired item, enclosed in square brackets [ and ]. Include the brackets when naming.

Spawn Using Animal Name

To spawn this item, buy an animal (we recommend a chicken because it is the cheapest) from Marnie's Ranch, name it [78]. You will then receive the Cave Carrot item.

Spawn Using Character Name

Since you can only set your character's name once at the game's inception, we advise using the animal naming method.

However, if you opt for this method, name your character [78] while creating your save file. When you converse with any villager who mentions your name in their dialogue, like Gus at the Stardrop Saloon, you'll receive the Cave Carrot item.
