Stardew Valley Professions
Each skill asks you to choose twice. The pick at level 5 decides which two professions you are offered at level 10, so a skill has six professions but any one save only ever sees two of them. The level-up screen gives you a single line per profession, and that line leaves out the part that usually decides the choice: what the bonus covers, what it skips, and whether two bonuses add together or multiply.

Changing a profession later
Donate 10,000g and pick one skill. That night you get its level 5 screen again, then its level 10 screen. Your existing bonuses drop the moment you choose a skill to change, and sell-price bonuses will not apply to anything already sitting in the shipping bin that day. The Sewers

How many professions are there in Stardew Valley?
Thirty in total, six per skill across the five skills. You only ever get two of the six on any one save: one at level 5, then one of the two that your level 5 pick unlocks at level 10.
Can I change a profession after choosing it?
Yes. The Statue of Uncertainty in The Sewers takes 10,000g and resets one skill's professions. You pick the skill, and that night the game shows you its level 5 screen followed by its level 10 screen. Your existing bonuses stop the moment you choose a skill to change, so do not ship anything valuable that day.
When do I choose a profession?
At level 5 and again at level 10 in each skill. The choice appears in the overnight level-up popup rather than the moment you hit the level, and the bonus only starts working the following morning. Anything you sell on the day you level up misses the new price bonus.
Which professions make the most money?
Artisan, from the Farming tree, is the largest by a distance once you are processing crops, at 40% on wine, cheese and jelly. Angler is next at 50% on fish, and Blacksmith gives 50% on metal bars. Botanist is the quiet one people underrate, because making every foraged item iridium doubles the base price and truffles count as foraged.
